Turkey Chili

Chili is the ultimate comfort food for me.  It’s also a very easy one pot meal.  Mid week when I’m busy but still want to make a nice healthy hot meal for my family, this is my go-to.  The turkey is leaner than beef, the beans add tons of fiber and the spices make it taste so good you’ll forget this is good for you.

Here’s what you need:

3 lbs. ground turkey

1 onion chopped

1 TBSP Ground Cumin Coriander

1 TBSP Red Chili Powder

1 TBSP Turmeric

1/2 TBSP Garlic Powder

2 tomatoes and 1 jalapeno chopped or 1 can rotel

1 can kidney beans

1 can navy beans

1 can pinto beans

1 can black beans

1 cup chicken broth

Rinse the beans and set aside.

Sautee onions in olive oil until translucent.  Add in turkey and seasonings.  Once the turkey is mostly brown, add in tomatoes and jalepeno (I added a serrano pepper too).  Cook until turkey is done, add in beans and broth.  At this point I usually just throw in a half teaspoon of all the seasonings.  Salt to taste.

If you’re doing this on the stove, let it simmer for 30 minutes to an hour.  I usually never have that time so I use my Instant Pot.  All the steps above are done on the Saute setting and then I close the lid and vent, and set on Manual for 12 minutes.  Once the timer goes off, I quick release and stir.

I served this with a little cheese but you can garnish with onions, cilantro.  Anything to make it beautiful!!
