Granola Bars

This is my absolute favorite to make!  So healthy, packed with all kinds of great things.  You can customize to your favorite flavors. And the best part-NO SUGAR NO CHEMICALS!

 

Here’s what you’ll need:

1 cup packed dates

1.5 cup rolled oats

1/2 cup chopped almonds

2 Tbsp flax seeds

2 Tbsp Chia seeds

2 Tbsp hemp hearts

2 Tbsp Pumpkin seeds or any other seed you want

1/4 cup honey or maple syrup/agave nectar

1/4 peanut butter or any nut butter

Toast oatmeal and almonds and any seeds like sesame to bring the flavor out.  Don’t do chia seeds.  15 minutes at 350 degrees should do but you want to toast just until they are fragrant and slightly browning.

Grind up dates in a food processor, make sure all seeds are out.  They will probably wad up while you’re blending.

Add the oatmeal, nuts, seeds and dates to a large bowl and mix until combined.  This takes a little effort and works best if you use your hands.  It can get a little sticky so I use gloves sometimes.  If you don’t want to use your hands, a spatula works just fine.

On low heat, melt the honey and peanut butter together until it is fluid and combined.  Pour over your mixture and mix until it all comes together.

Lay into a square pan that is lined with parchment paper or cling wrap.  Break up dark chocolate on top if you desire.  Cover in cling wrap and press hard to form into a block.  The more you press, the less it will crumble.  Refrigerate for 20-30 minutes.  Cut into bars and enjoy!

Keep in mind:

-You can add in dried fruit if you wish.

– If you don’t want to do bars, you can roll these into balls and they’re great on the go or for kids.

-Keep in an airtight container in the fridge.  There are no preservatives so make sure you finish them within the week.
