It is about to be hot as the Devil’s toenails and that means it’s time for a refreshing recipe. This salad is really easy to put together and so delicious. It’s an interesting mix of flavors and it is certain to peak some interest.
I’ve been craving watermelon throughout my pregnancy so this is a great way to get in some nutrition and satisfy that craving! This salad can be done a number of ways, but I keep it pretty simple. I love the juicy sweetness of the watermelon with the sharp bite of the red onions and the refreshing mint is just perfection with these flavors. If you want to take the onions down a notch you can soak them in water for 10-20 minutes prior to adding them to the salad.
Here’s what you need:
Watermelon – cubed
Red onion – thin slices
fresh mint – chopped
Organic salad greens – I love a Spring Mix
salt/pepper
cumin/coriander powder
feta cheese crumbles
red wine or balsamic vinegar
olive oil
Chop up all your ingredients and put in a bowl. Add salt and pepper and cumin-coriander to taste. Mix the olive oil and vinegar in a container and pour over the salad. If you’d like a crunch, some chopped almonds go well with this salad.
This is the perfect addition to any bar-b-que. It’s great as a side but you could also add some protein like grilled chicken or tofu and make it a main course.
